Tostados con Carnitias y Guacamole!

This is REALLY GOOD & easy to make. Try it! It’s crispy and warm on the bottom and crispy and cool on the top. The flavor is fabulous!

Tostados con Carnitas (Serves 8-10 or more)

4 pounds pork (shoulder, loin, or tenderloin)
1 T salt
1 t black pepper
5 cloves minced garlic
2 T finely minced fresh cilantro
1 t cumin
1 t adobo
1 t ground red chipolte powder
¼ t cinnamon
1 T chipolte hot sauce
Juice of three limes
¼ orange juice
12 ounces beer
½ cup salsa (I use spicy)

Place all ingredients in a clow cooker and stir. Cook for 8 hours on low, stirring once or twice.
Drain off ½ of the juice. (You can save the juice to use as flavorful stock in other recipes.)
Shred the pork in the pot with two forks.

Tostados

Package plate sized flour tortillas.
2 T oil
Carnitas
2 cans low fat frijoles negros
1 cup Pico de Gallo
8 cups shredded Mexican cheese (pepper jack, jack, cheddar) or your choice
6 cups shredded lettuce
½ cup salsa (I use spicy)
2 cups chopped cilantro
2 cups guacamole (recipe follows)
1 cup low-fat sour cream

Fry plate sized flour tortillas in oil until just crisp on both sides.

Keeping the tortilla in the pan, spread with frijoles, layered with carnitas, Pico de Gallo, topped with shredded cheese.

Place under a broiler and broil until cheese melts.

Remove. Layer with shredded lettuce, salsa, and cilantro.

Dollop with guacamole and sour cream and serve.

Guacamole

4-5 avocados
4 garlic cloves finely minced
Juice of one lemon
1 t salt
1/2 t adobo
3 heaping T’s salsa (I use spicy)
1 T minced cilantro
1/4 c finely minced onion
Smash all together and serve.

I retired early after 27 years as a psychotherapist/mental health director (Cindy Barton LCSW) and moved to the outer limits of no-wheres-ville to a home I call "the holler." My closest neighbors are coyotes (packs and packs of them and they are HUNGRY), rattlers (lots and lots of them and they are MEAN), and free range cows/bulls (the bulls aren't too friendly either!) Forget cell phones. They don't work out here. Forget GPS, it misdirects. It's best not to wander too much out here, the people (and their dogs) are kinda twitchy. To reach the holler your turn right at the reeking chicken farm, down a bunch of pot-holed semi-streets/dirt roads, past the abandoned refrigerators and occupied old RV’s and then things get kinda dicey. My friends usual reaction to the trip to the holler is, “you’ve got to be kidding!” Or, “Next time let’s meet half way.” This is our little bit of heavenly Appalachia right here in rural California. I blog about traveling which I do about three months a year, cooking which I love, photography, usually of my food and trips, books, holler happenings, and anything else that strikes my fancy.     • Synchronicity. In coincidence one finds the work of God. I was born and raised in La Jolla. Have lived all my life in San Diego. Now live in north northeastern unincorporated are on the county. Where in SD did you grow up, go to high school etc?????

      • Wow, grew up in pacific beach, mission beach, imperial beach (we moved a lot). I spent most of my time during my youth in PB. Then when I moved home from Italy I moved to Solana Beach. Now in Oregon where my son is. Miss my ocean so much. Sister lives in University City and my brother in Del Mar. I was born at Sharps in SanDiego. 2 natives-amazing!!!

      • I was born at Scripps as was my daughter, but my son was born at Mercy. We hung out on the same beaches. I lived in PB in college. I lived in University City when I first married. My ex went through school in PB. I wonder if we met? I keep a journal of these events and look for patterns. I find this particular coincidence most fascinating! Depending on your age, we really may have & we may know some of the same people. I was certainly drown to your blog. Now this! Most interesting……..

  1. Looks fantastic! Frank really likes mexican food (he is from Texas, after all, lol) and will no doubt go for this! I will look up a few of these ingredients (I am so clueless about this type of cuisine) and give this a try!
